The green beans add a fun contrast, while the fried rice basic as can be, soaks up the garlicky, beany flavours to make a meal as comforting as it is easy.

This plant-based masterpiece marries the earthy richness of garlic with the vibrant medley of chopped carrots, green beans, and the fresh, herbaceous notes of parsley.

  1. finely chop the parsley, garlic and carrot and set aside.
  2. drain the green beans and set aside. I used a can of cut green beans.
  3. Thoroughly rinse the rice with a strainer until the water is clear. I rinsed my rice 4 times.
  4. Add the rice to a pot and level it with a spatula before adding the water.
  5. Add 2 and 1/3 cups of water and cook over medium heat for 10 minutes with the lid on. After the 10 minutes are up, wrap the lid in a kitchen towel and cook over high heat for 3 more minutes. This will make the rice perfectly fluffy.
  6. Add oil to a pan and slowly add the garlic, carrot and green beans and cook for 4 minutes over medium heat mixing everything together. Put the lid on and let it cook for around 15 more minutes.
  7. Turn the heat up, add the rice and cook everything for 16 more minutes, stirring continuously. Make sure everything is mixed together. Add salt and pepper to taste.
  8. Add the parsley and mix everything together.
  9. Garnish with fresh parsley and serve.

Notes

  • You can switch up this fried rice recipe and make it your own in lotsa ways. Throw in some other veggies like bell peppers, peas or corn depending on what you like. Experiment with different spices too to put your own spin on it.
  • Leftover fried rice is awesome for meal prep the next day. Just reheat it with a little oil and the flavors get even better. It keeps well so it’s great to make extra.
