Description
This is a neat way to up-cycle potato peels into a tasty snack. You basically just wash and dry the peels, drizzle them with olive oil and a pinch of salt, maybe throw in some other seasonings if you want, then roast then until the peels get all crispy and crunchy! It’s a nice little treat that takes advantage of something that would normally get tossed out. Give it a try next time you’re prepping potatoes!

- Preheat the oven at 200°C.
- Grab 1 kg of potatoes, wash them and peel them.
- Place the potato peels in a bowl and rinse for two or three times, making sure you remove all dirt or residue.
- Drizzle plenty of olive oil over the peels and add salt, pepper and chilli flakes. Mix everything together to make sure the peels are fully covered in seasoning and oil.
- Transfer the potato peels onto a baking tray in a single layer and pop them in the oven at 200°C for about 48 minutes or until crispy. Baking time may vary based on how thick your peels are. Just keep an eye on them until they look golden brown and crispy enough for your liking.
- Add your favourite dip and serve immediately.

- Some fun ways to serve them are with dips like hummus, guacamole or dairy-free yogurt sauces and you can also crush up the chips to make a crunchy topping for salads, soups or vegan casseroles. That adds a nice texture.
