Roasted Potatoes

Roasting potatoes is one of those things that just makes your kitchen smell amazing. As your oven starts heating up and filling the house with that smell of crispy, golden potatoes, it’s hard not to get excited. Roasted potatoes might seem simple, but they can really take a meal to the next level as a tasty side dish. In this post I want to share my secrets for getting roasted potatoes just right – crispy and crunchy on the outside but still fluffy on the inside and it’s all about that combo of textures. Read on for my easy method for roasted potato perfection every time.

The first thing is starting with the right kind of potato. I used british white potatoes but you can use Yukon golds or russets or whatever you have – the key is to cut them into even sized pieces so they cook evenly.

These Roasted Potatoes will take your potato game to the next level! Chunks of tender potato get a nice drizzle of an aromatic mixture of olive oil, thyme, garlic, salt and pepper. When they come out of the oven, the potatoes are crispy and golden on the outside but still creamy on the inside – yum! The thyme and garlic give the potatoes a really nice savoury flavour that goes so well with the natural sweetness of the potato.

  1. Start by pre-heating the oven at 200°C.
  2. Bring a pot of water to a boil and add one teaspoon of baking soda and a generous amount of salt. Add the potatoes and boil them for around 12 to 15 minutes over high heat.

  3. Make a mixture of olive oil, grated or finely chopped garlic, thyme, salt and pepper (I recommend using a mortar and pestle for this) and coat the boiled potatoes in it.

  4. Place the oiled potatoes onto a baking tray in an even layer and add a few sprigs of rosemary.

  5. Transfer the baking tray into the oven and roast them at 200°C for about an hour and a half, flipping halfway through.
  6. Add your favourite dip and serve straightaway.

Notes

  • If you want to add protein serve with marinated tofu, tempeh or a hearty bean stew for a filling, balanced meal.
