This sandwich is perfect for vegans obviously, but meat-eaters could enjoy it too. The flavours all complement each other nicely.
You just need a couple ingredients that are probably already in your kitchen and throw them together between two slices of bread and voila! Satisfying sandwich with little effort.
I’ll walk you through making the perfect one from start to finish – picking fresh mushrooms layering on other goodies like tomato and green beans or spreading some good vegan mayo. Nothing complicated though, I promise!

Picking The Mushrooms

Vegan Mushroom Sandwich
Description
This vegan mushroom sandwich packs a seriously tasty punch. It’s got tender mushrooms mingling with sweet cherry tomatoes, onion, fresh green beans, and luscious vegan mayo. Each ingredient complements the next beautifully. Every bite is an explosion of bright vibrant flavours that’ll leave you eager for your next helping.

- Start by cutting the mushrooms lengthwise and set aside.
- Peel and thickly chop the onion and garlic just like in the image below.
- Trim the ends of the green beans.
- Add olive oil to a hot frying pan and cook the onions and garlic for a few minutes until translucent over medium-high heat. Add salt and pepper to taste and stir frequently.
- Add the mushrooms, cook until tender and set aside.
- Cook the green beans for a few minutes until soft and set aside.
- Slightly toast the 2 bread slices on both sides.
- Slice the cherry tomatoes.
- Make the mayo by adding 2 tbsp of vegan mayo with olive oil, pepper, chilli flakes and mix.
- Spread the mayo over one side of the bread slice.
- Build the layers for the sandwich, starting with the mushroom, onion and garlic mixture, then the green beans, salad leaf, more mushrooms, mayo, tomatoes, salad leaf and so on.
- Add the second slice of bread on top and wrap the sandwich in baking paper. Slice the sandwich in two.

- Vegan Mayo – Use a high-quality vegan mayo to make it nice and creamy. Or try some flavoured kinds for extra flavour.
- Salad Greens – Throw in some fresh lettuce or spinach leaves for crunch and freshness and gives a nice texture next to the cooked stuff.
- Seasoning – Season everything, includin’ salt and pepper, to taste good. You can also add herbs and spices like thyme oregano or paprika. The key is makin’ each part tasty on its own, then puttin’ em together for a great sandwich. Don’t be shy with flavours and textures!
